Today on Good Day Sacramento, I share light bites for summer!
Sheet pan nachos
First up is mini bell pepper “chips” nachos. These are topped with S&W Beans, which 6-9 grams of fiber per serving, which is important for digestive health, and 6-7 grams of plant-based protein, which is the same amount found in one egg or 1 oz. of meat. I used European Solider Beans from the Heirloom Series, which are these unique colorful varieties that are exclusively grown by hand-picked farmers and only available from S&W Beans. You can find these at Whole Foods and on Amazon.
For flavor, I used the Fresh Cravings salsa and hummus which are made with a short list whole food ingredients. With hummus you get a balance mixed of good fats, fiber and protein from Chilean extra virgin olive oil, chickpeas and savory tahini. You can find the hummus at Safeway and salsa chilled in the produce section at Foodmax, Savemart and Walmart.
Apple slice cookies
Next we have apple slice cookies. I started with the Autumn Glory apples which are crunchy and sweet and great of you love cinnamon and caramel flavor grown exclusively by Superfresh Growers you can find the on amazon fresh. Get creative with toppings like nut butters and spreads and fun toppings like chocolate chips and sprinkles.
Smoothie bowls
My final recipe is a tropical citrus protein smoothie bowl. They key to a thick smoothie bowl is protein power and as little liquid as possible. Other than that, get creative with difference frozen produce – especially utilizing what is in season!
