CBS Good Day Sacramento: National Breakfast Month

Today on Good Day Sacramento, I shared easy and nutritious breakfast options for everyday of the week!

Weekday morning breakfast

Yogurt parfaits and overnight oats are great weekday options. I made them with Zespri SunGold Kiwifruit, which is sweeter-than-green kiwi with a tropical-sweet flavor similar to a cross between a mango & strawberry! I recommend using one serving which has 3x the Vitamin C of a medium orange and meets 100% of your daily vitamin C needs – a nutrient that is important for immune health. To make the overnight oats, combine 1/2 cup of rolled oats, 1/2 cup of milk, 1/3 cup of plain low fat yogurt, 1 tbsp of chia seeds and 2 chopped up Zespri SunGold Kiwifruit. Transfer to a jar, let that sit in the fridge overnight and you have a delicious breakfast waiting for you in the morning.


Grab and go breakfast

For a grab and go option we have Atkins new Mocha Latte Protein Shakes which have 15g of protein, 1g of sugar and just 4 g net carbs so they satisfy hunger and provide steady energy. You can find them at Walmart.com, Atkins.com and on Amazon. And Atkins has great meals, snacks and meal plans for those looking to get back on-track and lose the “quarantine 15”.

Weekend morning breakfast

For weekends we have citrus waffles made with Uncle Matt’s Organic, which is #1 selling brand of organic orange juice that also makes functional beverages like the Organic Orange Turmeric with probiotics that support digestion and immunity. I used 1 cup of the classic Pulp Free Orange Juice which meets 100% of your vitamin C needs and is made with a blend of organic Hamlin and Valencia oranges. To make your waffle batter combine 1 cup of whole wheat flour, 1 tsp baking powder, 1 cup Uncle Matt’s Organic Orange Juice, 1 egg, zest of 1 orange, pinch of salt and 2 tbsp of oil.

Friday calls for banana bread 3 ways 🍌🍞 (swi Friday calls for banana bread 3 ways 🍌🍞 (swipe) - I used my base banana oat bread recipe & customized for fruity, nutty & chocolatey lovers 🍓🍫🥜plus added @mooala_koala plant-based original banana milk which is nut- & dairy-free made with bananas + sunflower seeds and no added sugar. ✨Recipes deats below 👇#bananabread #healthybananabread #bananabread3ways #RDeats #nutritionbymia

For the base, you’ll need:
2 bananas
2 cups oats
1/3 cup Manuka honey
1 tsp baking soda
1/4 cup Mooala Original Banana Milk

🍫Chocolate add-ins: 1/4 cup cacao powder + 1/2 cup chocolate chips
🍓Strawberry cream cheese add-ins: 1 cup chopped strawberries, 1/4 cup cream cheese
✨Walnut add-ins: 1/2 cup walnuts, 2 tsp cinnamon 

What to do:
1️⃣Preheat oven to 350 F.
2️⃣Add base ingredients to a food processor and process until smooth. Fold in add-ins gently by hand and transfer to a pre-greased or pre-lined bread pan. Bake for 35-40 minutes or until set. Allow to cool before slicing.
