Breakfast box 6 ways! I know that many of us are heading back into the office so I’ve rounded up six of my favorite make-ahead breakfasts that are easy to make and nutritious. Veggie egg scramble

Scramble 2 eggs  with cherry tomatoes and spinach. Enjoy with roasted sweet potatoes and a sliced whole grain pita.

Tropical parfait

Add low-fat Greek yogurt to your bento box and enjoy with pecans, kiwi and gold dragon fruit.

Eggs and bacon

Enjoy two hardboiled eggs topped with everything bagel seasoning, 1 bacon strip, cherry tomatoes and fresh guacamole.

Savory waffles

To make these waffles, combine 1 egg with 1/4 cup of shredded cheese, 1/2 grated zucchini and 2 tbsp blanched almond flour. Pour batter into a waffle iron and cook until set. Enjoy with fresh spinach and salsa.

Strawberry chocolate chia

Add low sugar chocolate granola and strawberries t0 your bento box and enjoy with chia pudding – 3 tbsp chia seeds + 3/4 cup vanilla oat milk.

Protein Pancakes

Enjoy 4-ingredient pancakes made with 1 egg,  1 banana, 1 tbsp pb and 1/2 tsp baking powder. Serve with extra sliced banana and PB.
