Make Monday morning a little easier with banana bread FRENCH TOAST!
This recipe is made with ingredients you may already have on hand and it’s completely gluten-free! Made with heart-healthy pecans, caramelized bananas and kitchen staples like cinnamon, maple syrup and ghee.
I love starting my day with French Toast. It seems indulgent and more of a “Sunday morning breakfast” but the truth is, that it is easy to make and offers a good balance of nutrition.
Choosing bread made with whole grains means starting your day with fiber and B vitamins. Fiber has staying power while B vitamins support digestion and metabolism. French toast also calls for eggs, which add additional staying power (protein). Just a little bit of maple syrup and brown sugar is enough to bring out the natural sweetness of the bananas in this recipe. Fruit is a great way to naturally sweeten French toast while adding fiber, vitamins and minerals.
For the base of this recipe, I use Udi’s Gluten Free New Delicious Multigrain Sandwich Bread.
Compared to other gluten free breads,these slices are bigger (in the 24 oz loaf) and softer in texture. Perfect for French toast, sandwiches and more!

- 1 banana, ripe
- 1 egg
- 1/2 cup cashew milk
- 1 tbsp maple syrup
- 1/2 tsp cinnamon
- 1 tbsp ghee
- 4 slices Udi’s Gluten Free Delicious Multigrain Sandwich Bread .
- 1 banana, sliced
- 1 tbsp ghee
- 1 tbsp brown sugar
- 2 tbsp pecans
- Optional: maple syrup for serving
