For dessert, take advantage of peak season berries with my blueberry crumble bars.
Heat and mash 2 cups of blueberries, combine with 2 tbsp of chia seeds and set aside to thicken. Blend together 1 ½ cup oats, 1 cup almond flour, 1/3 cup of oil and 1/3 cup of maple syrup. Press ¾ of the mixture into the bottom of a pan and bake for 10 min., then add your blueberry filling and the remaining crumble topping before baking for another 15 minutes. These blueberry crumble bars are sweet, tangy and perfect for the season .
Finally, cheese to summer with sparkling lemonade.
Enjoy this refreshing sparkling lemonade on its own with fresh mint and lemon slices or combine with white wine for an adult-friendly beverage. Sparkling lemonade is a hydrating source of vitamin C, and great for staying refreshed in the summer heat.
