Mother’s Day is just around the corner so it’s a perfect time to spoil mom with a delicious and nutritious brunch at home. Today I share the ultimate better-for-you spread starting with a build your own waffle bar!
Build your own waffle bar
Start by assemble your nutritious toppings – we have whole fresh fruit, whole grain granola, nut butter and coconut yogurt. Next make your 6-ingredient plant-based waffles – for the batter, whisk together 2 cups whole wheat flour, 2 tbsp flax meal, 2 tsp baking powder, 2 tbsp sugar, ¼ cup oil, 1 ½ cup Plant Oat Unsweetened Oatmilk. This is a delicious non-dairy full bodied milk alternative that has great taste and boasts nutritional benefits thanks to the mighty oat. It has 0 grams of sugar and only 45 calories per serving. This January, Planet Oat launched Planet Oat Unsweetened oatmilk available in original and vanilla flavors. With its rich, creamy texture, Planet Oat is enjoyable by the glass, in cereal or coffee and is great for cooking. You can find Planet Oat Unsweetened oatmilk at Publix and most Walmart stores.
Yogurt parfaits
Another great addition to your Mother’s Day Brunch spread, is yogurt parfaits. These parfaits are made with Wonderful Halos which are an excellent source of vitamin C which supports a healthy immune system. In fact just two medium Halos meet 50% of your daily needs. I started with low fat vanilla Greek yogurt which is a good source of protein and calcium and topped with one wonderful halo, whole grain granola, more yogurt and another wonderful halo. Wonderful Halos have natural energy so they can help power you through the morning, they are a good source of fiber and with 85% water, they can help keep you hydrated. Wonderful Halos are seedless and easy to peel. Be sure to pick them up at your local grocery store while they are in season.
Single-serve savory salsa skillets
Finally I have a delicious single-serve brunch addition for savory lovers. These salsa egg skillets come together in minutes. I started by adding Fresh Cravings salsa into a single-serve skillet. Make A nest for THE EGG and bake for 15 minutes at 400 F. What really makes this recipe is the Fresh Cravings refrigerated salsa. When it comes to salsa, opt for refrigerated versus jarred. Fresh Cravings certified organic salsas are sold chilled in the produce section of Publix and the conventional is sold at Walmart. It is available in Chunky Medium Spice or Restaurant Style in Mild, Medium and Hot. Made with just a short list of clean, organic ingredients like vine-ripened tomatoes, crisp vegetables, zesty peppers and spices – this salsa packs both flavor and nutrition. You can find Fresh Cravings salsa chilled in the produce section at Walmart.
