With summer just around the corner, it’s the perfect time of year to enjoy delicious and nutritious recipes utilizing fresh sustainably grown sweet and tangy blueberries.
Blueberries may be small in size but they pack a punch when it comes to nutrition.
Blueberries contain a category of phytonutrients called polyphenols including anthocyanins, which are compounds that give blueberries their blue color and also offer a range of health benefits. They’re a great source of fiber, which aids in digestion and helps keep you feeling full, as well as other essential nutrients including vitamin C, vitamin K and manganese. Blueberries are also incredibly versatile and can be snacked on by the handful or incorporated into both sweet and savory recipes.

Blueberry Chia Pudding
Start your day off on a nutritious note with blueberry chia pudding. Blend together 1/2 cup blueberries with 1 cup of almond milk, combine with 3 tbsp of chia seeds and set aside to thicken before transferring to serving jars. This blueberry chia pudding is naturally sweetened with blueberries instead of added sugar and is packed with filling fiber, antioxidants, plant protein and good fats.
Blueberry and Goat Cheese Salad
If you are looking for a recipe to bring to your summer gatherings, you’ll love this easy blueberry and goat cheese salad. Make the dressing by combining ¼ cup olive oil, 2 tbsp balsamic vinegar, 1 tsp Dijon mustard, salt and pepper. Then toss together with 4 cups of arugula, ¼ cup diced red onion 1 cup of blueberries, 1/2 cup of walnuts and ½ cup crumbled goat cheese. This summer salad is bursting with juicy flavor and nutrition.
Blueberry Crumble Bars
And for dessert, enjoy my blueberry crumble bars! Heat and mash 2 cups of blueberries, combine with 2 tbsp of chia seeds and set aside to thicken. Blend togther 1 ½ cup oats, 1 cup almond flour, 1/3 cup of oil and 1/3 cup of maple syrup. Press ¾ of the mixture into the bottom of a pan and bake for 10 min., then add your blueberry filling and the remaining crumble topping before baking for another 15 minutes. These blueberry crumble bars are gooey, crumbly and perfectly sweet and the perfect dessert to make as we head into summer.
