ABC News 4: Summer Kick-Off Menu

May 28, 2021

path of life, volley tequila seltzer, true made foods condiments,, enlightened ice cream

Hey Tom and Erin! The countdown to summer is on! Today I have more delicious ways to celebrate this Memorial Day weekend starting with convenient way to incorporate more veggies.

A 5-min veggie side

The Path of Life Frozen quinoa and rice blends are full of flavor and super easy to prepare. They are a made with a short list of clean and simple ingredients. Simply steam in the microwave or cook on the stovetop and pair with a protein of choice to build a complete meal, enjoy as a nutritious side on its own or with the recommended add-ins like fresh lemon juice, feta and olives. All the path of life frozen products are plant-based, certified gluten-free and non-gmo project verified. They are an easy way to add more color to your diet! Find Path of life locally in the frozen vegetable aisle at Publix, Bi-Lo and Lowes Foods.

Next, I have pulled pork sliders with a produce-packed twist. These are made with potato buns and BBQ sauce made with fruits and veggies. For the pulled pork rub, combine 1 tbsp each of salt, pepper, garlic, onion, chili and paprika. Bake for 3 hours at 300 F. Shred with a fork and toss with your True Made Foods Carolina bbq sauce which comes in Carolina gold, Carolina red and eastern Carolina varieties. True Made Foods is a veteran owned company that has revolutionized America’s favorite iconic condiments with the sweetness of real fruits and vegetables instead of sugar so that there’s no compromise at the dinner table or backyard barbecue. You can find the True Made Foods condiments locally at Harris Teeter, Whole Foods, Lowes Foods and online at truemadefoods.com.

Feel-good dessert to kick off summer

Next, I have the ultimate feel-good dessert to kick off summer. Enlightened ice cream is a creamy, scoopable ice cream that is low in calories and sugar and high in protein and fiber. They have the most indulgent mix-ins, chunks and swirls in the light ice cream aisle like brownies and cookie dough, carmel fudge pretzel and salted caramel cookie. It tastes so good, you won’t even miss the sugar! Enjoy it with a homemade 3 ingredient magic shell, whisk together 1 tbsp cocoa powder, 1 tbsp of maple syrup and 1 tbsp of coconut oil. Allow it to harden on your enlightened ice cream and enjoy! You can order Enlightened Ice cream at eatenlightened.com to deliver straight to your door or locally at Whole Foods, Publix, Walmart and Harris Teeter.

Patriotic spritzer to kick of MDW

Finally cheers to the start of summer with a delicious tequila seltzer. Volley is the first clean, ready to drink tequila seltzer on the market crafted with only three ingredients: 100% blue agave tequila, sparkling water and organic juice. It’s free of the added sugars and syrups, “natural flavors,” and preservatives that are found in most other seltzers on the market. It was founded by husband-and-wife duo Christopher Wirth and Camila Soriano, Charleston, transplants who have nearly 15 years of combined experience in the cocktail industry. Volley is best enjoyed chilled from the can or mixed into a summertime cocktail, and is available in four refreshing flavors: Spicy Ginger, Zesty Lime, Sharp Grapefruit and Tropical Mango. Shake gently before serving. With values rooted in environmental sustainability and preservation, Volley is currently hosting beach cleanups and outdoor educational events around the country in partnership with Leave No Trace a non-profit that provides resources so every person can protect + enjoy our natural world. Find Volley locally at East Bay Wine and Spirits and Bottle Beverage Superstore as well as DrinkVolley.com.
