ABC News 4: Memorial Day Menu Makeover

Memorial Day weekend marks the unofficial start of summer! Today on Good Food Friday, I share a delicious veggie-packed spread.

App: low carb veggie chip sheet pan nachos!

These sheet pan nachos can feed a crowd and are made with veggie chips! Add mini bell peppers in a single layer on a lined baking sheet and top with black beans, red onion, Fresh Cravings certified organic salsa and cheese. Bake for 10 minutes at 400 F and top with cilantro. Salsa is a great way to add flavor and nutrition for very little calories and get in a serving of veggies. Fresh Cravings salsa is refrigerated, not jarred. And made with just a short list of clean, organic ingredients like vine-ripened tomatoes, crisp vegetables, zesty peppers and spices. Salad: with a low carb twist

Next, I have a summer salad with a low carb twist. These salads are served out of baked savory cheese bowls! Here I’ve crisped them into savory cheese bowls, but you can also melt them onto burritos or omelets, fold them into lasagna or enjoy straight out of the package for a low carb, high protein delicious cheese snack. Ultimate summer protein  to complement veggies off the grill


This primavera stuffed chicken is made with Wayne Farms Chef’s craft gourmet chicken breast fillets which are fully cooked, flame grilled and ready to eat in 30 minutes or less using the oven, stovetop, microwave, skillet or air fryer.  Their chicken is vegetarian fed and farm raised with no antibiotics. Their products also include Gluten Free Breaded Chicken Breast Chunks and Grilled Chicken Breast Chunks all of which are gluten-free, preservative free and minimally processed. Find them locally at Walmart and Food Lion. Festive dessert with benefits made with only 4 ingredients

Finally, I have a festive dessert with benefits made with only 4 ingredients.  These oat cups are packed with filling fiber and are naturally sweetened with fruit. To a large mixing bowl combine 2 cups of quick oats and 2 large ripe bananas. Press the mixture into a pre-greased muffin pan and bake for 10 minutes at 350 F or until set. Fill your oat cups with plain or vanilla yogurt and top with berries. Berries are a great way to add natural sweetness and a festive touch. Plus they are packed with antioxidants which may help slow down the aging process.
