ABC News 4: Healthier Super Bowl (Big Game) Meals and Snacks

February 11, 2022

Is there anything tastier than some game day eats? I share snacks and meals ideas today on Good Food Friday for the Big Game!

Start with finger food apps – guacamole loaded potato skins

These loaded potato skins are made with guacamole – a nutritious way to level up this popular game day snack. I use WHOLLY® GUACAMOLE which is made with hand-scooped Haas avocados and real, quality ingredients with absolutely no preservatives added. It’s ready-to-serve so you can enjoy it anytime, anywhere and not sacrifice great taste for convenience, or deal with the unpredictable nature of avocados that may or may not be ready in time for the game.

For this recipe, start by brushing russet potatoes with olive oil and baking for 50 minutes at 400 F. Slice the potatoes in half and remove the flesh leaving about a 1/4th inch still intact. Bake potato skins for another 15 minutes or until crips. Sprinkle cheese on top and bake for 3-5 minutes or until melted. Top each with guacamole, red onion and cilantro.

Next up we have walking tacos!

Simply cut off the top of your chip bag and add your taco fillings. I used Atkins Protein Chips in Nacho Cheese and Ranch – they have the salty crunch that you want in a chip but with 13 grams of protein per bag and 4 grams of fiber. Then add your taco fillings like salsa, guacamole, cheese, shredded lettuce and jalapeño.

Next up on the menu is Mediterranean bell pepper chip sheet pan nachos made with hummus

Start by slicing mini bell peppers in half and place on a lined baking sheet. Bake for 15 minutes at 350 F to soften. Next top with hummus. I used the NEW creamy Fresh Cravings hummus made with Chilean extra virgin olive oil and a short list of high-quality whole food ingredients like chickpeas and savory tahini. It comes in classic, roasted Red Pepper and roasted garlic – you can find it at Walmart. Then add diced red onion, cilantro, Kalamata olives, feta and Fresh Cravings Salsa. Fresh Cravings is known for their super fresh refrigerated salsa made with a short list of high quality whole food ingredients. You can find it chilled in the produce section in chunky or restaurant style in a range of heat levels.

Round out your game day spread with a favorite – wings with a plant-based twist!

The LikeMeat Like Chick’n Wings are made with a perfectly crispy coating and juicy meat like texture so they taste like the real deal. Each pack comes with a pouch of vegan buffalo sauce you can use for tossing or dipping. Its available in three different sizes ranging from 1 lb to large sharable bags at Walmart, Target and Sams Club. All gluten free, certified plant based and non gmo.
