ABC, Lowcountry Live: Host a Healthy Fourth of July

The fourth of July is a HUGE food holiday. Today on Good Food Friday, we covered all your bases with nutritious appetizers, entrées and a fun dessert!

Light Bite:

For a light bite before the main course, I shared my firecracker shrimp bites. You’re getting fiber, good fats, lean protein AND you are also helping to meet your recommended two servings of seafood per week, which some studies have linked to longevity, stress reduction and better sleep. Seafood is not only a good source of protein and omega-3 fats, it contains a slew of vital nutrients – many of which are hard to get from other foods like iron and vitamin B12.

Summer Salad:

I shared my arugula southwestern salad made with Borden Cheese Thick Cut Shreds, which are especially great for melting because they are nearly five times larger than regular shreds. This salad calls for one serving of the Borden Cheese Sharp Cheddar, which provides 7 grams of protein and is an excellent source of calcium. If you don’t like sharp cheddar, they also have a mild cheddar, mozzarella or four cheese Mexican.

The main course:


For the main course, I shared Springer Mountain Farms BBQ chicken wings and veggie kabobs. This is the chicken they serve at some of our best local restaurants including Poogan’s Porch and Hominy Grill. It’s a family owned company with over 350 family farms in the mountains of Northeast Georgia. Their chickens are vegetarian fed and humanely raised in fact they were the first poultry producer to gain the endorsement of the American Humane Association.

Nutritious and fun dessert:

I ended with a fun summer dessert – Florida Orange Juice Freezer Pops only made with three ingredients and a great way to get kids involved in the kitchen.
