ABC Charleston: Incorporating More Plant-Based Eats

April 12, 2019

Catalina Crunch, Heartland Chia, Explore Cuisine Red lentil Pasta, Good Foods Plant Based Dips

Incorporating more plant-based foods into our diet is not only good for our health but the environment as well. Today on Good Food Friday, I shared meatless meal and snack ideas!

Breakfast

First, I shared the first ever zero sugar Dark Chocolate and Cinnamon Toast cereal. It’s called Catalina Crunch and seriously tastes amazing – it’s made with pea protein and is naturally sweetened with monk fruit, which makes it low in carbohydrates and higher in protein and fiber.  It’s also gluten-free and completely plant-based.

A superfood you need more of

Chia seeds may be small in size but they are a nutrient powerhouse – protein, fiber, calcium, omega-3 fats the list goes on and they are easy to incorporate into meals and snacks. I shared chia pudding, muffins and you can even add to fruit-infused water for a nutritional boost. Heartland Chia the only chia grown in the US and the owners of the company are the farmers that grow it.It’s gluten free and non-gmo. We know that eating locally grown food lowers our carbon footprint.

Plant-based snacks

For snacks I shared sweet potato skins, veggies, chips & delicious Plant Based Dips by Good Foods. I shared their Queso and Buffalo style, which are available locally at Publix. I love these because the first ingredients are veggies – so they are produce forward made with a cauliflower almond base. They’re gluten free, dairy free made with no artificial ingredients, preservatives or added sugar.

A plant-based meal

asta is a great plant based meal option especially when it’s made with beans or lentils which makes it higher in protein and fiber and gives it that staying power. I shared the Organic Red Lentil Penne is by Explore Cuisine, it has 11 grams of protein per 2 ounce serving and is only made with two ingredients – red lentil and brown rice flour which helps give it a perfect al dente texture.  It’s also organic, gluten-free, non-GMO and it cooks up in minutes.
