I’m on News 4 Jacksonville’s River City Live sharing easy summer entertaining tips and recipes!

First, build lighter meals and snacks in the summer by pairing protein with produce like these spicy salmon cucumber boats!

Start with the Low Sodium Wild Alaskan Pink Salmon which is a versatile and delicious way to get the protein and omega-3s you need. This is an easy way to add high-quality seafood and flavor to your favorite dishes like sandwiches, salads and rice bowls. Salmon is also one of the few foods that naturally contains Vitamin D, which your body needs to support a healthy immune system and absorb calcium for strong bones. After combing with mayo, cilantro and sriracha, stuff into cucumber boats and top with diced peppers, carrots and more cilantro. This is a delicious way to infuse color and nutrients into your mealtime.

For a light and refreshing adult summer beverage, we have sparkling wine spritzers. Muddle together pineapple juice, raspberries and lime juice, then add one bottle of white wine, I’m using Pinot grigio by FitVine Wine which makes delicious, lower sugar, full-flavor wines for people who want adult beverages that taste good AND fit their lifestyle- whether that be fitness or wellness. Each bottle has less than one gram of sugar, compared to the average wine which contains 1 gram of sugar per GLASS. Finally, put a nutritious twist on your summer charcuterie board. Load up on in-season fruit, veggies and nutritious dips. I love salsa because it’s low in calories and high in flavor.
