We all know that the holidays are already super busy, so I like to keep it simple in the kitchen. What I love about pistachios is that they are plant-based and versatile so you can enjoy them as a snack or in recipes. Today, I shared three recipes that are perfect for the holidays: easy to make, taste amazing, and provides nutrients
Wonderful Pistachios Street Tacos with Avocado Pistachio Cream Slaw
First up I have plant-based street tacos. These aren’t a traditional holiday dish, but we all need simple healthy meals in between all the festivities, and this is one of my go-tos. These tacos are plant-forward and powered with complete protein from Wonderful Pistachios. Pistachios are a great plant-protein choice compared to meat because they’re naturally cholesterol-free and add fiber to your day. For these tacos, I used the Wonderful Pistachios No Shells Lightly Salted. Their whole No Shells line is perfect for saving time in the kitchen, because they’ve done the cracking for you! These tacos are packed with flavor, from pistachios, herbs and spices. The pistachio-avocado-slaw here also works beautifully on the side of chicken or fish dishes.
Wonderful Pistachios Pico de Gallo with Sweet Corn Soup
Next up is a recipe I enjoy making during the cooler months — a sweet corn soup featuring Wonderful Pistachios Pico de Gallo. It’s a great starter or can be put into shot glasses as an appetizer for parties. Not only do the pistachios provide crunch, but they also add complete protein that helps fuel your body with essential amino acids.mWhat’s great about soup is that you can batch cook ahead of time and freeze it so you can heat and serve on the day of any holiday gathering.

And to wrap up a snack board is a must have for any holiday gathering. You can mix them up in a variety of ways – incorporating family favorites, cultural influences and even getting kids involved to make this special. When I am making a board, I always make sure to have a high-quality protein like pistachios – they’re one of the highest protein snack nuts, heart-healthy, and can definitely be part of eating right with diabetes. I added both Wonderful Pistachios In-Shell No Salt and No Shells Lightly Salted. I’m always surprised not as many people know about these two low sodium varieties – but I love all the good nutrition and great taste they offer. Then I make sure there’s some healthy fats – pistachios check that box too. I want healthy carbs from colorful fruits and veggies, too which also make it vibrant and color. These are easy and fun to make and can be unique to your family and guests for the holidays. What’s great about all these recipes I shared is that they can fit into a healthy diet for a person with diabetes during the holiday season and all year round.
