New week, new eats!
This steak fajita bowl is an easy work week meal that checks your protein, veggie and energizing carbohydrate boxes.
Typically fajitas are made with white flour tortillas. This is a deconstructed version that replaces empty carbohydrates with energizing whole grain brown rice. Whole grains provide filling fiber along with B vitamins which are important for helping to convert food to energy.
Loaded up on veggies as well! I used bell peppers and red onion sautéed in oil on the stovetop for about 5 minutes until lightly crisp and tender.
Don’t get flavor! I used spices and herbs like cayenne and cilantro as well as low calorie lime juice to bring this bowl together.
Serve with guacamole and plain yogurt (or sour cream).
