Host a healthy Galentine’s Day brunch with your best girls!
Happy Valentine’s week! Whether you are single or in a relationship, Galentine’s Day is for all women.
Why not host a boozy brunch with a DIY waffle bar?
Waffles are my favorite and such an easy breakfast food. I use whole wheat flour in my batter which has more fiber, protein and staying power. My favorite part of course, is the toppings. Feel free to get creative with different red and pink fruit like raspberries, pomegranate and strawberries. Don’t forget the chocolate! I served mini dark chocolate chips and Valentine’s Day M&Ms (you have to!). Nuts are also a great addition.
It’s not Galentine’s Day without wine! I served the Pasqua Romeo & Juliet Rosso and Bianco red and white wines both from the vineyards of Verona where of course is where one of the greatest love stories unfolded of Romeo and Juliet. In fact, the label on the bottle has a photo of the famous wall on Juliet’s house where over 3000 love notes are written each day.

- 1 cup balanced almond flour
- 2 tsp baking power
- 1/4 tsp salt
- 1 cup cashew milk
- 3 eggs
- 2 tbsp coconut oil
- 1/2 cup chocolate chips
- 1/2 cup pink and red M&Ms
- 1 cup strawberries, sliced
- 1 cup raspberries
- 1/4 cup red and pink sprinkles
- 1/4 cup pomegranate arils
- 1 bottle Pasqua Romeo and Juliet Red Wine
- 1 bottle Pasqua Romeo and Juliet White Wine

- Add all waffle ingredients to a large mixing bowl and whisk together until combined.
- Preheat a waffle iron and pour batter to make waffle until all the batter is used up.
- Assemble topping ingredients in bowls and serve with wine!
