Instructions
Preheat the oven to 400°F.
Place the cod on a baking sheet and bake for 18 to 22 minutes or until crispy and fully cooked through.
Warm the mini flour tortillas in a dry skillet for 20 to 30 seconds per side or microwave wrapped in a damp paper towel for about 20 seconds.
Toss the Southwestern salad kit.
Place the cod in the tortilla with the salad and a drizzle of dressing then serve.
