Brown the ground beef in a large skillet . Season with salt and pepper, then transfer to a plate.
Add a drizzle of oil to the skillet and sauté the mirepoix for 4–5 minutes until softened.
Return the beef to the skillet. Add the macaroni and 3 cups water or beef broth. Stir, cover, and cook for about 10 minutes, or until the pasta is tender and most of the liquid is absorbed.
Stir in the Unexpected Cheddar Cheese Spread and shredded cheddar until melted and creamy.
