Sweet Potato Crust Pizza

Ingredients
  

  • 2 sweet potatoes
  • 1/2 cup oat flour
  • 1/2 cup pizza sauce
  • 1/3 cup shredded cheese
  • 1/4 cup mini pepperoni

Instructions
 

  • Preheat your oven to 400°F. Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake whole for 40–50 minutes, or until soft. Let them cool slightly, then scoop out the flesh into a mixing bowl.
  • Mash the sweet potato flesh until smooth. Stir in the oat flour until a dough forms. On a parchment-lined baking sheet, press the dough into a round, pizza crust shape. Bake for 15–20 minutes or until the crust is firm and lightly golden.
  • Spread a layer of pizza sauce over the baked sweet potato crust. Sprinkle with shredded cheese and add mini pepperoni or any toppings of your choice.
  • Return the pizzas to the oven and bake for another 5–7 minutes, until the cheese is melted and bubbly.
  • Let the pizzas cool slightly before slicing and serving. Enjoy!
