Preheat your oven to 400°F. Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake whole for 40–50 minutes, or until soft. Let them cool slightly, then scoop out the flesh into a mixing bowl.
Mash the sweet potato flesh until smooth. Stir in the oat flour until a dough forms. On a parchment-lined baking sheet, press the dough into a round, pizza crust shape. Bake for 15–20 minutes or until the crust is firm and lightly golden.
Spread a layer of pizza sauce over the baked sweet potato crust. Sprinkle with shredded cheese and add mini pepperoni or any toppings of your choice.
Return the pizzas to the oven and bake for another 5–7 minutes, until the cheese is melted and bubbly.
