Summer Tomato, Corn and Avocado Salad

Ingredients
  

  • 4 ears corn  
  • 1/2 red onion
  • 1 container SUNSET® Flavor BOMBS® tomatoes 
  • 1 avocado, diced
  • 1 lime
  • salt and pepper to taste
  • Optional for serving: chopped cilantro   

Instructions
 

  • Bring a large pot of water to a boil. Add the corn and cook for 5–7 minutes, until tender. Let cool slightly, then slice the kernels off the cob.
  • Slice the tomatoes and dice the red onion and avocado.
  • In a large bowl, toss together the corn, tomatoes, red onion, lime juice, salt, and pepper.
  • Top with avocado and cilantro, if using.
