cauliflower gnocchi

mirepoix

thyme

spinach

half and half
Instructions
Cook the mirepoix in a large pot with olive oil for 2 minutes.
Add in the chicken, broth, thyme, salt and pepper. Bring to a boil, stir in the gnocchi and reduce to a simmer. Cook for another 10 minutes.
Stir in the spinach and half and half, and cook for anther 2 minutes.
