Pickle "Bread" Sandwich

Ingredients
  

  • 3 oz.  low-sodium deli turkey
  • 1 large pickle or cucumber
  • 1 tomato, sliced
  • 1/4 red onion, thinly sliced
  • 1/2 cup  lettuce, chopped
  • 1/4 cup dill pickle chips

Instructions
 

  • Slice pickle or cucumber in half lengthwise and scoop out seeds. 
  • Top one half with lettuce, turkey, red onion, tomato, pickle chips and more lettuce followed by remaining bun half.
