Most of us know white button mushrooms on pizza but they have potential for so much more! Try these different preparations to broaden your meals and snacks rotation.
- Roast in the oven for an easy side dish
- Sauté with veggies and protein for an easy balanced meal
- Slow cook in soups and stews for concentrated flavor
- Stuff them with protein, veggies and fresh parmesan

Mushroom nutrition 101
Mushrooms are fat free, cholesterol free, low in calories and provide important nutrients like B vitamins, potassium along with antioxidants. B vitamins help convert the food we eat into energy and potassium is important for our muscles. Mushrooms are also one of the only plant-based sources of vitamin D, a nutrient important for bone health.
Mushrooms = the ultimate plant-based “meat” swap
Mushrooms add a meaty texture and taste to recipes and are perfect for your meatless Monday dishes. However, you don’t need to eliminate meat from your diet completely if you don’t want to. Try blending finely chopped white button mushrooms with ground meat in your homemade burger patties, taco filling and spaghetti Bolognese recipes. - 3 large whole grain tortillas, warmed
- 1 cup white mushrooms, minced
- 9 oz. ground learn turkey
- 1/4 yellow onion, diced
- 1 tbsp taco seasoning
- 1 tbsp vegetable oil

Tacos

- Warm oil in a large skillet over medium heat. Sauté onion and mushrooms for 5 minutes then add in ground turkey and taco seasoning. Break turkey into pieces and cook for 5 minutes or until combined and no longer pink.
- Divide grounds mixture among taco shells and serve with toppings of choice.

- 6 eggs
- 1 cup white button mushrooms, sliced
- 2 cups baby spinach
- 1 medium red bell pepper, chopped
- 1 tbsp vegetable oil
- 1/4 cup shredded cheese
- 1/2 cup unsweetened almond milk
- salt and pepper to taste
Ingredients

- Preheat oven to 375 F and grease a muffin pan.
- In a large mixing bowl, whisk together eggs, cheese, milk, salt and pepper.
- Warm oil in a large skillet over medium-high heat and sauté mushrooms, spinach and bell pepper until cooked and tender, about 5 minutes. Transfer to the bowl with eggs and stir to combine. Divide mixture among muffin cups and bake for 20-25 minutes or until set.

- 2 burger buns, toasted
- 8 oz. ground grass-fed beef
- 2 tbsp diced onion
- 1 clove garlic, minced
- 1/2 cup white mushrooms, minced
- salt and pepper to taste
- 1 tsp Italian seasoning

- In a large mixing bowl, mixt together beef, onion, garlic, mushrooms and seasonings until combined.
- Preheat grill to medium-high and cook patties on both sides until browned and no longer pink in the center with an internal temperature of at least 160 F.
- Serve you patties with buns and toppings of choice.
