Who doesn’t love some cheesy, crunchy nachos?
They are a classic comfort food and a staple at every college tailgate. Since we like to take our own healthy spin on classic recipes here at Nutrition By Mia, we decided to do just that with this recipe.
Chickpea chips make up the base of these nachos and don’t forget to load on the veggies! Simply assemble your ingredients on a lined baking sheet and broil in the oven for 2-3 minutes. You get crunch, savory and protein for staying power.

Instead of beef, I opted for a heart-healthy protein: TUNA. - 1 bag Chickpea Chips
- 1 can Safe Catch Tuna
- 1/4 cup black olives
- 1 cup cherry tomatoes, sliced
- 1/4 cup jalapeño
- 1/3 cup shredded cheese
- 1/4 cup cilantro, chopped
- Preheat oven to broil.
- Layer chips out evenly on a lined baking sheet.
- Top chips with Safe Catch Tuna, olives, cherry tomatoes and jalapeño.
- Sprinkle cheese on top.
- Top with cilantro.
- Broil in oven for 2-3 minutes before serving.
