The reason why Mission Produce named these avocados “Emeralds in the Rough” is because they aren’t as visually perfect as grade 1 avocados, BUT, they taste just as amazing. Not only do they help reduce food waste, they are also more affordable.
Contrary to popular belief, avocados are actually FRUITS and one of the only ones that contain fat. The type of fat in avocados is the GOOD kind of fat – think mono and polyunsaturated fats that the American Heart Association says to eat more of. Avocados also contain a slew of vitamins and minerals including vitamin E for skin, fiber for digestion and potassium for healthy muscles.
While I love traditional sprouted toast, I am obsessing over sweet potato toast as a naturally gluten-free and nutrient-dense alternative. Sweet potatoes are a beta-carotene powerhouse, which is a powerful antioxidant and precursor to vitamin A, our skin-loving nutrient.
The best part of these toasts? The toppings! I got creative with different combinations to satisfy the preferences of a crowd. I personally love the smoked salmon toasts. Let me know which one is your favorite!
