Start your day with a superfood parfait packed with calcium, antioxidants and protein for staying power.
As a dietitian and food lover, I am all about functional foods. Picking ingredients that taste good and serve a nutritional purpose is the name of the game when it comes to my recipes. That’s why I love “superfood” ingredients.
There is no medical definition of the word ‘superfood’. It is a general term used to describe foods high in nutrients relative to the amount of calories that they contain. They often boast vitamins and minerals that are hard to obtain from everyday foods like vitamin D (hello sardines).
I call this a superfood parfait because of the nutrients that it boasts – namely calcium, probiotics, healthy fats and antioxidants!
Yogurt is a potent source of calcium which I described last week as being vital to bone building and maintenance especially for young women. Antioxidants help fight free radicals in the body which may help prevent cell aging – goji berries happen to be one of the most potent sources of antioxidants.
When choosing granolas, I always tell my clients to read the ingredient label – look at the sugar source and grams as well as the fat source used. Aim for a lower sugar content and a healthy fat source like olive.
Of course when it comes to chocolate, the darker the better. Dark chocolate is a higher source of antioxidants and typically lower in sugar.

- 1 cup yogurt
- 1/2 cup low sugar granola
- 2 tbsp dark chocolate chips
- 2 tbsp goji berries
- In a medium cup, layer 1/2 cup of yogurt.
- Next, add 1/4 cup of low sugar granola.
- Add remaining yogurt on top.
- Add remaining granola on top followed by dark chocolate chips and goji berries.
