Something to keep in mind is that vitamin C is sensitive to water and heat so cooking methods like quick steaming are preferred to boiling. Enjoying vitamin C-rich foods in their uncooked form will retain the most of this nutrient and thus provide the most nutritional benefit.
Coconut: Though I covet the taste of coconut one should be wary of its high saturated fat content. While current research continues to unveil (and debunk) the truth behind saturated fats and our health, we should still consume this rich fruit in moderation.

1 cup papaya, sliced
1 cup banana, sliced
1 cup coconut milk
1/4 cup cashews
