This smoothie takes me back to the life on Maui island, featuring tropical fruit, coconut and papaya. Papaya is one of the richest sources of vitamin C, not only an essential nutrient but also a powerful antioxidant. Coconut milk adds a rich, creaminess to this summer drink along with the blended cashews. Packed with nutrition and a throwback to island life, it’s hard not to enjoy this sweet and creamy summer blend.
Nutrition:
Papaya: Papaya is one of the richest sources of vitamin C, a free radical-scavenging, collagen-producing, iron-absorption-enhancing nutrient. Something to keep in mind is that vitamin C is sensitive to water and heat so cooking methods like quick steaming are preferred to boiling. Enjoying vitamin C-rich foods in their uncooked form will retain the most of this nutrient and thus provide the most nutritional benefit.
Coconut: Though I covet the taste of coconut one should be wary of its high saturated fat content. While current research continues to unveil (and debunk) the truth behind saturated fats and our health, we should still consume this rich fruit in moderation.
PAPAYA AND COCONUT SUMMER SMOOTHIE
//Ingredients//
1 cup papaya, sliced
1 cup banana, sliced
1 cup coconut milk
1/4 cup cashews
Coconut flakes
//Directions// First add cashews and coconut milk to a blender and blend throughly. Add fruit and continue to blend. Top with coconut flakes and serve.
