Instructions
Preheat oven to 450 F. Cut your sweet potatoes into thin “Bread” slices and place on a lined baking sheet and bake for 10 minutes, flipping half way.
Scoop Mission Avocados in a large mixing bowl and mash with a fork. Add salt and pepper to taste.
Scoop Mission Avocado mixture on each sweet potato slice and spread with a knife.
For toast 1: place hardboiled eggs on top of a fifth of the slices and garnish with parsley.
For toast 2: place tomato slice on top of a fifth of the slices and garnish with parsley.
For toast 3: place two cucumber slices on top of a fifth of the slices and garnish with parsley.
For toast 4: place rolled up smoked salt pieces on top of a fifth of the slices and top with onion and parsley.
For toast 5: add bacon bits to a pan and sauté until cooked. Sprinkle on top of a fifth of the slices.
