- 2 cups mushrooms, finely chopped
- 1 tbsp taco seasoning
- 1/2 avocado, sliced
- 2 tbsp salsa
- 4 whole grain corn tortillas
- 1 tbsp olive oil
- Optional: jalapeno, cilantro

Instructions
- Warm oil in a medium sauté pan over medium-high heat. Add mushrooms with seasonings and sauté until cooked and tender.
- Divide among tortillas and top with salsa, avocado and toppings of choice.
