Beet Root Brownies
  1. Preheat oven to 350 F.
  2. Add all ingredients except chocolate chunks to a food processor and process until batter is uniform.
  3. Pour batter into a parchment paper lined bread pan and top with chocolate chunks.
  4. Bake for 15 minutes or until a toothpick comes out clean when inserted in the center of the brownies.
  5. Allow to cool completely before cutting into squares. Serves 6.
