Ingredients
Peanut Sauce
- 2 tbsp gluten free tamari
- 1/2 cup creamy peanut butter (no sugar added)
- 1 tsp ginger
- 1 tsp garlic
- 1/2 cup mushroom broth
Pasta
- 1 box Explore Cuisine Organic Red Lentil Pasta
- 1/4 cup green onion, chopped
- 2 tsp sesame seeds
- 2 tbsp peanuts, chopped
- 1 cup broccoli, cut into small florets
- 1 red pepper, cut into strips
- 1 cup snow peas
- 1 tbsp avocado oil

Instructions
- Cook pasta according to instructions. Drain and set aside.
- Warm oil in a large skillet over medium-high heat and cook broccoli, red pepper, snow peas until cooked and tender. Transfer to a large mixing bowl with pasta.
- In another large bowl, whisk together dressing ingredients and pour over pasta. Toss pasta to coat.
- Top pasta with sesame seeds, peanuts and green onion.
