Starting the first official week of 2016 right with pomegranate orange zest oats rich in antioxidants, fiber and vitamin C. Oatmeal is definitely a staple this time of year as the temps turn colder (even here in Charleston!). This is a comforting breakfast you can make to start your day that even packs in some seasonal items. Different variation of oatmeal will be making an appearance in the coming weeks as well. Nutrition:
Pomegranate Small in size but powerful in free-radical scavenging antioxidants. Pomegranate arils boast more than fiber, protein and vitamin C. As a rule of thumb, the smaller the fruit, the higher the antioxidant capacity. As we know, antioxidants help keep our cells healthy by combating premature aging and preventing environmental stressors from doing damage to our DNA.
Orange: Fiber and Vitamin C are two nutrient standouts in these citrus fruits. Vitamin C has been shown to shorten the duration of a cold making oranges a perfect fruit for the winter months when we are more prone to getting sick.
- 1/2 cup rolled oats
- 1 cup water
- 2 tbsp orange juice
- 2 tbsp pomegranate arils
- 2 tbsp almonds, crushed
- 1 tbsp orange zest
- 1 tbsp maple syrup (optional)
- Cook your rolled oats in 1 cup of water and 2 tbsp of orange juice.
- Top with pomegranate arils, crushed almonds, orange zest, and maple syrup.
