Who can say no to breakfast in bed – especially on Mother’s Day?
As a kid, I loved spoiling my mom with homemade gifts and sentimental cards. What is funny is that my father’s birthday often fell on the same day which meant my brother and I had to take the reigns on planning meals and celebrations!
Part of the reason I love food and nutrition so much is because food is an easy way to show appreciation to someone, any day of the year.

One rule I have when it comes to Mother’s Day meals is to keep it as simple as possible. It’s fun to get the kids involved in the food prep – from breakfast in bed to one-pot dinners with minimal cooking steps.
I kept this breakfast light, delicious and easy to throw together.
Peaches are just about in season now so I knew I had to include them. Plus, they pair seamlessly with the Bourbon Barrel Syrup from The Maple Guild which has been aged for 2-3 months in used Kentucky bourbon barrels! They use a steam-crafting process to produce their maple syrup which transforms the sap to syrup in 90 seconds. This results in a pure, delicate tasting syrup that pairs well in baked goods, on top of pancakes/waffles or even in BBQ sauce.

- 1 cup blanched almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- Pinch of Pink Himalayan Salt
- 3 eggs
- 2 tbsp coconut oil
- 2 tbsp The Maple Guild Bourbon Barrel Maple Syrup
- 3/4 cup plain almond milk
- 1/4 cup The Maple Guild Bourbon Barrel Maple Syrup
- 1 cup peaches, sliced
- 1/2 cup ricotta
- Granola (optional)
- Add batter ingredients to a large mixing bowl and combine until uniform.
- Add 1/2 cup batter (depending on size of waffle maker) to your preheated and greased waffle maker.
- Top waffles with sliced peaches, ricotta, The Maple Guild Bourbon Barrel Maple Syrup and granola (optional).
