Let’s get this healthy tailgate party started!
I am so excited to be kicking off tailgate season this week on Good Food Friday. First up: entree!
What’s a tailgate without a little grilling action? My first tip to upgrading your healthy tailgate is opting for the right protein.
Chicken is leaner than most meats meaning its lower in saturated fat (the one we want to avoid in excess) while being high in protein for staying power and important vitamins like zinc. This week I will be preparing two particularly lean yet flavorful cuts – Boneless Skinless Thighs and Thin Sliced Boneless Skinless Breast.
These paleo air-fried chicken thighs are easy to make and perfect for your tailgate.
Breaded in savory seasonings and tapioca starch and air-fried meaning way less fat than your standard fried food. These are perfectly crispy and go seamlessly with raw veggies, honey-sweetened ketchup and paleo ranch.
I used Springer Mountain Farms chicken which is a family owned business that has been raising chickens for over 40 years in the hills of Northeast Georgia.
I discovered their chicken at two of my favorite restaurants around the corner from my practice – Poogan’s Porch and Husk! Not only is it some of the best chicken I’ve ever eaten, they are also the first poultry producer in the world to gain endorsement of the American Humane Association under the American Humane Certified program. Their chickens are raised on a vegetarian diet without the use of antibiotics. You can find it locally in most grocery stores.
