Are you a breakfast person? I definitely am.
As a dietitian, I truly believe that breakfast is the most important meal of the day. In fact, some studies show that kids that start their day with a balanced breakfast, perform better in school and are more likely to be at a healthy weight. Adults who start their day with a good meal, may be more likely to eat healthier throughout the remainder of the day. All the more incentive to start your day with a good meal!
Forgo your morning pastries and start your day with PROTEIN.
My rule of thumb when it comes to a balanced breakfast, is to combine protein with fiber for ultimate staying power. A tuna melt definitely fits the bill!
I cannot stress the importance of protein enough when it comes to breakfast (and all meals for that matter). It’s our satiating macronutrient and balances blood sugars much better than a scone or donut (which will likely leave us hungry again, mid-morning).
For the base, I used sprouted whole grain bread. Sprouting bread results in more bioavailable nutrients meaning your body can better absorb and utilize them. - 1 can Safe Catch Tandoori Wild Tuna
- 2 tbsp mayo
- 1 tbsp avocado oil
- 2 tomato slices, halved
- 4 slices whole grain sprouted bread
- 1/4 cup cheddar cheese, shredded
- 1/4 cup fresh thyme
- Set oven to broil.
- Place bread slices on a lined baking sheet. Brush both sides with avocado oil.
- In a medium mixing bowl, combine tuna, mayo and thyme until you achieve a uniform mixture.
- Divide tuna mixture into three portions and top bread slices.
- Place half a slice of tomato on top of each bread slice.
- Top each bread slice with cheddar cheese and broil for 2-3 minutes until cheese is melted.
- Garnish with extra thyme.
