Nutrient-packed Caesar Salad (vegan)

I’ve never met a caesar salad I didn’t like but why settle for like when you can LOVE. This one is for all of my iceberg lettuce lovers convincing you to “go romaine” for a similar taste but much more nutrition! Currently enjoying chopped romaine with this creamy dressing made with a cashew base and free of preservatives or additives commonly found in store-bought dressings.

Romaine is rich in vitamin A, vitamin K and folate. The beta carotene works in conjunction with vitamin C to help prevent the oxidation of cholesterol and keep our hearts healthy. Also rich in fiber which has heart-healthy benefits to be coveted as well.
