Halloween doesn’t have to be all about the candy! Today on News 4 Jacksonville, I shared tips on how to host a healthy and haunted Halloween.
Festive way to serve veggies
A healthy Halloween party spread needs veggies and serving them in a fun way can help encourage their consumption. I shared my pumpkin celery platter. I used Dandy’s celery, which was developed to be sweeter, crispier, and have fewer strings than other celeries thanks to their 3 phDs on staff. Then you can carve out a pumpkin to use as a bowl for your healthy dip. An easy and festive way to serve your veggies!
Halloween Party Mix
Next up, we have my healthy Halloween party mix. For the base, I used the Saffron Road single serve chickpeas in sea salt and Bombay spice. They’re a great potato chip swaps because they are high in plant protein and fiber and you still get that crunch. You can find them on Amazon. Next you add popcorn, dried cranberries and pumpkin seeds so you get lots of great textures, flavors and nutrients.
Spooky Finger Food
Next up I shared spooky finger food – Halloween taco cups! I used the Garden Fresh Gourmet Thick n Chunky salsa which adds a delicious blend of tomato, fresh onions and cilantro. They’re made in small batches with high quality ingredients and no artificial preservatives. You can find it in the refrigerated deli section at Publix for 4.99 – great to have on hand for easy entertaining.
Healthy Halloween Desserts
Finally, its not Halloween without a healthier dessert – I shared my sweet potato brownies and a pumpkin loaf. Instead of using butter, I used COCAVO which is made with extra virgin coconut and avocado oils that are raw, organic and cold pressed. Because of the unique blend – it has less saturated fat than regular coconut oils – which is the one we want to limit in excess and more good mono-unsaturated fats. Because of its high smoke point, it’s great for cooking as well.
