When it comes to breakfast, I am ALL about healthy and convenient. Despite being a morning person, I still feel rushed many mornings – we’ve all been there. I have begun a habit of preparing meal and snack options ahead of time so that I can grab and go and not have to worry about forgetting to eat or opting for something that won’t be nutritious for my body and give me the energy I need to tackle the day.
I was so excited to create a breakfast muffin using AIYA America Matcha which is a Cooking Grade Matcha meaning it is specifically made for baking and culinary purposes and won’t lose the precious nutrients that it boasts. Additionally, you can add it into your smoothies, lattes and blended drinks as well.
If you are like me, matcha green tea powder is fairly new on your radar. However, when I started learning about the incredible antioxidant capacity it boasts and how it can be an excellent alternative to coffee, I knew I had to try some for myself. In fact, AIYA America Matcha contains higher antioxidant levels on a per gram basis than natural fruits and vegetables which was cited in the Journal of Agriculture and Food Chemistry. Antioxidants help protect our cells from damage caused by free radicals which can be brought on by environmental stressors, for example.
So despite drinking your matcha, I thought it would be fun to create a breakfast muffin using this good stuff that would give you a burst of energy in the AM and fight free radicals in your body – win-win!
What is great thing about this recipe is that you can easily make it a breakfast or dessert option. Like I mention often on Nutrition By Mia, I love using mashed bananas as a natural sweetener in lieu of sugar. This is something I do in a lot of my breakfast recipes because if gives just the hint of sweetness I crave. These are rich in fiber and protein so they will give you staying powder to get through the morning and the AIYA America Matcha gives you an energy boost to tackle the day.
With Halloween just around the corner, how fun would it be to serve green muffins as a dessert option? If you are looking to make these on the sweeter side, I recommend including the sugar which I have noted in the recipe below.

- 2 ripe bananas, sliced
- 1/4 cup butter, softened
- 2 eggs
- 1/2 cup coconut flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 2 tsp. Aiya Matcha
- 1/4 cup coconut sugar (optional)
- Preheat oven to 350 F.
- Grease a muffin tin or line with 12 muffin liners.
- Using an electric mixer, combine eggs, softened butter and sliced bananas. Mix until well combined.
- In a separate bowl, combine together coconut flour, baking soda, baking powder, Aiya matcha and sugar (optional), until uniform. Add to wet ingredients and mix until well combined.
- Divide batter evenly into 10-12 muffin tins.
- Bake for 18-20 minutes.
