Love Your Gut Plate

Ingredients
- 1 cup quinoa, cooked
- 1 cup chickpeas, cooked
- 1 cup asparagus, chopped
- 2 cups spinach
- 2 sweet potatoes, chopped
- 1/2 red bell pepper, diced
- 2 tbsp hummus
- 1 lemon, halved
- 1 tbsp avocado oil
Instructions
- Divide quinoa and cooked chickpeas onto two plates.
- In a large frying pan, heat avocado oil.
- sauté sweet potato and asparagus (together or separate) until tender and transfer to both plates.
- Next, sauté spinach and red bell pepper (together or separate) until cooked and transfer to both plates.
- Squeeze half a lemon over all ingredients on each plate.
- Serve with hummus and enjoy immediately.
