Wake up or wind down with chocolate chip walnut scones that are grain free, low in sugar and made with healthy fats.
Chocolate chip walnut scones… need I say more?
I am a scone lover through and through. If you hand me both a muffin or scone, it’s guaranteed that I will choose the latter.
I love how they are crumbly, dense and pair perfectly with coffee or tea. Most scones, however, are made with refined flour which is a pure carbohydrate devoid of any sort of nutritional value, and butter which is high in saturated fat.
I was determined to make a scone that utilized a nutrient-rich flour and still have that melt in your mouth taste.
Enter: almond flour. Of course, I had to add dark chocolate chips which makes these more of a dessert option rather than breakfast.
Blanched almond flour is great for gluten-free, low-carb baking.
Unlike coconut flour (my other grain-free baking love), almond flour doesn’t need as high of a liquid to flour ratio. Another thing to note is that these are oil and butter free which makes them particularly dense. Because they are made with those good fats, all you need is one to feel satiated.
While I used walnuts and dark chocolate chips to flavor these, I recommend adding your own twist like dried cranberries or fresh strawberries.
