Cheesy tuna kale cups are a great quick, high quality protein & calcium snack to take on the go or pack in your kid’s lunchbox.
I am all about quick, tasty and convenient ways to add a punch of protein to my day and sneak in those extra veggies. These cheesy tuna kale cups fit the bill.
High quality protein and on-the-go, typically do not mix. Tuna is one exception to that and I’ve been experimenting with ways to jazz it up and make it more fun to eat.
These cups are packed with those good omega-3 fats (DHA) for brain & heart health and a source of complete protein (all essential amino acids) to fuel my active lifestyle.
I made these with Safe Catch Tuna which is the lowest mercury tuna on the market so it’s a great kid-friendly option and made with simple, clean ingredients with nothing artificial. The seasoned elite variety comes in six different flavors so you don’t have to do much to it – it’s ready to enjoy!

- 1 can Safe Catch Garlic Herb Seasoned Elite Wild Tuna
- 1/4 cup onion, minced
- 1/4 cup kale, chopped
- 1 cup cheddar cheese, shredded
- 3 eggs
- 2 tbsp greek yogurt
- Preheat oven to 325 F.
- In a large mixing bowl, beat eggs and combine with tuna, onion, kale, greek yogurt and cheddar cheese.
- Divide mixture evenly in a non-stick mini muffin tin.
- Bake for 15-20 minutes.
