It’s dessert Friday!
I am celebrating the end of the week and beginning of summer with these 15 minute gluten free brownies made with a secret ingredient – superfoods!
If you know me, you know I love incorporating superfoods every chance I get whether it be breakfast, dessert, lunch or snacks. While they don’t have an official definition, superfoods in general are known as foods that have a high level of vitamins, minerals and antioxidants relative to the amount of calories they contain.

Beet root adds fiber, natural sweetness and a compound called betaine that may help support heart health and digestion.

- 1 cup almond flour, blanched
- 2 tbsp BareOrganics Beet Root powder
- 2 tbsp cacao powder
- 1/2 cup coconut sugar
- 2 tbsp coconut oil
- 1 tsp baking powder
- 1 egg
- 1/4 cup water
- 1/2 cup chocolate chunks
Ingredients

- Preheat oven to 350 F.
- Add all ingredients except chocolate chunks to a food processor and process until batter is uniform.
- Pour batter into a parchment paper lined bread pan and top with chocolate chunks.
- Bake for 15 minutes or until a toothpick comes out clean when inserted in the center of the brownies.
- Allow to cool completely before cutting into squares. Serves 6.
