It’s Good Food Friday! Today I am sharing ways to makeover your menu with healthier options starting with burgers.
One ingredient that can make or break burgers is condiments and Primal Kitchen’s is a great option because they are made with high quality whole food ingredients like avocado oil, spices and herbs, no artificial ingredients or added sugar. Here I used their famous avocado oil mayo, unsweetened ketchup and award-winning buffalo sauce. I actually included them in my grocery list featured in SHAPE magazine this month. You can find them on amazon and most major grocery stores.
Another staple to elevate your burgers is pickles! The Grillo’s Pickles are truly the best. They’re cold, crunchy, made with fresh clean ingredients they add nice tangy crunch to everything served off the grill – chicken fish you name it. They actually started out of a hand-built pickle cart in Boston selling 2 Spears for $1 and now they are sold in the refrigerated pickle section nationwide at Publix, Whole Foods, Target and Costco.
Tofu tomato skewers
Next I have a grilling recipe that is pretty unique but your guests will love made with tofu! Grilled Tofu and Tomato Skewers – the recipe is from House-foods.com. Tofu is a nutritious, affordable source of plant-based protein that is mild in taste and absorbs the flavors you cook it with. For this recipe, you want to use FIRM tofu House Foods tofus are made with US grown non gmo soybeans. Cut your tofu the same size as the cherry tomatoes and string onto a skewer, paint your sauce on one side, grill for 3 minutes then flip and repeat. This sauce is really simple – it’s mainly garlic, red wine vinegar and some herbs
Patriotic party platter
Ending with a fun patriotic party platter. I built this around the Fresh Cravings certified organic salsa which great way to add flavor and nutrition to your meals and snacks plus get in a serving of veggies. It’s made short list of clean, organic ingredients like vine-ripened tomatoes, crisp vegetables, zesty peppers and spices. You can find it chilled in the produce section of Publix in Chunky Medium Spice or Restaurant Style in Mild, Medium and Hot. Then I added red white and blue fruits, veggies, bean chips, beet crackers.
Pickle “Bread” Sandwich
- 3 oz. low-sodium deli turkey
- 1 large pickle or cucumber
- 1 tomato, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup lettuce, chopped
- 1/4 cup dill pickle chips
- Slice pickle or cucumber in half lengthwise and scoop out seeds.
- Top one half with lettuce, turkey, red onion, tomato, pickle chips and more lettuce followed by remaining bun half.
