Beet hummus has been on my mind since last summer and these fries gave me the perfect excuse to throw together a recipe.
I would say that roasted veggies dipped into hummus is a staple in my diet. It’s creamy, satiating and the flavors are endless. Since the base of hummus is legumes, it’s a great source of fiber, protein and B vitamins.
They get their gorgeous red color from a plant pigment called betanin which acts as a power antioxidant in the body and may help prevent DNA damage and LDL oxidation (hello, anti-aging).
Veggie Fries sent me some to try of their flavors to try. As a dietitian who works directly with moms looking for feasible way to get their kids to eat more veggies, I fell hard for this product! They are crispy and crunchy like your traditional french fry but also made with the good stuff – fresh vegetables, legumes and potatoes.
