Cauliflower pizza crust, I just can’t quit you.

It seems like just yesterday that I was making a mess in my kitchen ricing my own cauliflower, finding cauliflower bits all over your kitchen and attempting to find the perfect ratio of ingredients to make cauliflower pizza crust. Now I am finding crusts everywhere – Trader Joe’s and online from my friends at Cali’flour foods, which save me time in the kitchen and use ingredients that I trust.

If you are like me, you are a pizza lover (because who isn’t)?

When I discovered cauliflower crust, I started enjoying it a lot more since it was an excuse to get more veggies and tastes just as good as the original stuff. I always recommend it to my gluten-free clients as a way for them to enjoy pizza without having to give it up all together. It is also a hack I share with moms trying to feed their kids more veggies. After all, cauliflower is a veggie so it’s packed with fiber, vitamins and minerals.

I topped my pizza with my fresh broccoli walnut pesto because I was craving earthy.

I love making this pesto in the spring and adding it to proteins, pastas, veggies and pizza. It’s perfect if you don’t have basil or pine nuts on hand. I almost always have organic broccoli and walnuts.

Cauliflower Crust Pesto Pizza

Ingredients
  1. 1 cup broccoli walnut pesto (recipe link above)
  2. 1 plant-based cauliflower pizza crust (Cali'flour foods or Trader Joe's)
  3. 1 cup olives
  4. 4-oz mozzarella, cut into 1-inch pieces
Instructions
  1. Preheat oven to 375 F.
  2. Cook pizza crust for 5 minutes and remove from oven.
  3. Top crust with broccoli walnut pesto, olives, and mozzarella chunks.
  4. Bake for an additional 10 minutes before serving.
