Isn’t gingerbread just the quintessential taste of Christmas? Ok I can name a few others (egg nog, cider, hot chocolate…). But when it comes to the cookie spread, you’ll want these on your menu. No-bake gingerbread cookies are my new favorite thing as evidenced by me whipping up three separate batches in three days. ‘Tis the season!
No-bake Gingerbread Cookies

A seasonal, nutrient-dense treat for the holidays and beyond.
Ingredients
- 2 cups of pecans
- 8-10 dates, pitted
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp vanilla extract
- 1 tsp blackstrap molasses
Instructions
- Blend the pecans in a food processor.
- Add remaining ingredients to form a sticky dough.
- Form dough into desired shapes (gingerbread mean, Christmas trees, etc.). ** Note: It is best to serve each cookie individually on wax paper if you chose to form them into designs rather than roll them into balls.
