I am clearly on a pizza kick lately, cauliflower crust pizza kick that is.
It is my mission to turn all my family and friends into cauliflower crust pizza lovers.
As a dietitian, transitioning from regular to cauliflower crust was easy.
Some, however, are not as easily convinced which means I have been experimenting with different ways to serve it.
The great thing about cauliflower crust is that it is mild in taste so you can make it both sweet or savory.
I love that there are so many options becoming available – even at Trader Joe’s!
This pizza is for those looking for a sweet treat that can be put together in minutes. If you have the crust available, all you need are the toppings and a sweet marscapone cheese. I opted for granola, dark chocolate chips, some nuts and a PB drizzle but feel free to get creative!

- 1 Cauliflower Pizza Crust
- 8 oz mascarpone cheese
- 1/4 cup dark chocolate chips
- 1/2 cup granola
- 1/4 cup peanut butter
- Bake cauliflower pizza crust according to instructions.
- Spread mascarpone cheese evenly on baked pizza crust and tip with dark chocolate chips, granola and PB drizzle.
- Cut into 6 and serve.
